Perfect for those busy mornings when you want to cook in your sleep!
Having a busy morning? Then this might be a great breakfast option for you! It’s loaded with energy-fueling foods, and fiber to help keep you feeling full until your next meal. Muesli is a typical European breakfast that I am very familiar with. My family is from Germany, and muesli was a big part of our morning ritual.
Oats are typically soaked with yogurt, but for this recipe I suggest soaking the oats with chia seeds, water, and lemon while you sleep. This process helps with digestibility, and removes some of the phytic acid that interferes with the body’s ability to absorb minerals.

Apples and almonds are a complimentary pair and will have huge benefits for your health. Apples provide a source of vitamin C, while almonds contain vitamin E. Consuming these two vitamins together will benefit your health. Your body normally relies on vitamin E for its antioxidant cell protective properties. However, without vitamin C, your body uses up the active vitamin E, leading to an inactive form that can no longer protect your cells. So eat your apples and almonds together!
- 2 cups oats (soaked over night)
- 2 cups water
- 1 lemon juiced
- 2 tbsp chia seeds
- 2 apples chopped
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/2 cup almonds roasted
- 1/4 cup mulberries
- 1 tbsp honey
Soak the oats, chia seeds, water, and lemon together over night or for at least 30 minutes while you are preparing the other ingredients.
Divide soaked oats between bowls. Top with apples, cinnamon, salt, almonds and mulberries.
Drizzle with honey.
*For a vegan option omit the honey.
