Okay you guys. I am so excited about this cauliflower soup! To be honest, I’m not a huge cauliflower fan and I try to avoid raw cauliflower if I can. Yes, I hate to admit it but raw cauliflower makes me gag. I can’t believe I just said that! But we all have at least one food that we can’t stand. Am I right? So in my attempts to take my least favorite health food and turn it into my new favourite food, I made this creamy cauliflower soup. And I totally succeeded! So if you are like me and can’t stand cauliflower, then you have to trust me when I say this velvety soup just might convert you into a cauliflower lover!
Plus if you are looking for an easy soup recipe to cozy up with on these shorter and colder days then this cauliflower soup just might do the trick. It is so creamy and delicious that you might be surprised to know that no heavy creams or cheeses were used in this recipe. That’s right! Only cauliflower and other veggies contributed to help make it delicious and creamy (and perhaps my vitamix). The key is to roughly chop your veggies, steam them for about 5-7 minutes, add them to your favourite blender along with all the other ingredients, and voila! You have a nourishing and satisfying soup. It’s really that easy!

- 1/2 head cauliflower, broken into pieces
- 1/2 yellow onion, cut roughly into pieces
- 1/2 potato, cut into chunks
- 1 celery stalk, cut into 2" pieces
- 1 garlic clove
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup almond milk or broth
- toppings: cauliflower, green onions, fried garlic, onion
place cauliflower, onion, potato, celery, and garlic into a steam pot and steam for 5-7 minutes.
place steamed vegetables, salt, pepper, and milk or brother into a blender.
blend until smooth. Add more liquid if soup becomes too thick to blend.
