In the past the only time I got to enjoy gravy was around Thanksgiving or Christmas when I was invited to other peoples homes for dinner. I would watch the painstaking process of removing the juices from the turkey, followed by the fat, skin, and bones, all before they could start to make the gravy. The whole process always seemed time-consuming and messy to me, so I never tried to do it myself. Then, years ago, I discovered a different way to make gravy. An easy, simple, but elegant way that’s sure to impress everyone!
So today I will share my favourite gravy recipe with you. It’s so quick and easy but loaded with flavour that you will never have to bake a turkey or buy gravy from the store again. This Easy Mushroom Gravy is so thick and creamy that you will want to make it over and over.
And guess what? Mashed potatoes aren’t the only veggie that gravy goes on.
Try it on…
sweet potato poutine, cauliflower mash, baked potatoes, hash browns, chicken, steaks, lentil loafs, shepherds pie, pot pies, vegetables, biscuits, waffles… okay you get the idea. Just try it!
- 8-10 cremini mushroom, sliced (about a cup)
- 2 tablespoons water (for cooking mushrooms)
- 2 tablespoons grass fed butter (or vegan butter)
- 3 tablespoons spelt flour (or whole wheat flour)
- 1 1/2 cups vegetable or chicken broth
- 1/4 -1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 - 1/2 teaspoon dried thyme
Heat water in a small pot. Add sliced mushrooms and cook for 3 to 5 minutes, until soft. Place mushrooms in a bowl and set aside.
Heat butter in the same pot as you cooked the mushrooms. When butter has melted, stir in flour until blended.
Slowly start adding the broth and continue to stir until all the broth has been added.
Add the cooked mushrooms, salt, pepper, and thyme. Adjust seasoning to your liking.
Place in a serving dish and top with fresh thyme.
Recipe can be doubled or even tripled.
If you accidentally make the gravy too runny add 1 teaspoon gelatin with a small amount of warm water. Mix the gelatin with the gravy and let sit for a few minutes.
