A delicious gluten-free gingerbread cake to mark the beginning of a new year!
It’s my birthday, and everybody is celebrating New Years Eve. I could say that everyone is running around getting geared up to celebrate my birthday but to be honest it never feels like that. But that’s okay because I’m thinking a healthy dessert full of all my favourite spices will go over well! Hello, gingerbread cake! And goodbye 2017. I’m ready to end the year with a festive low-fat and healthy treat for the holiday season.
This gluten-free gingerbread cake is the perfect combination of moist and tasty, while managing to be at least somewhat healthy. This cake introduces the perfect aroma to the kitchen on this chilly winter day that make me feel all warm and comfy inside. It’s kind of like wearing your favourite winter sweater and slippers!
As you already know from my soft and chewy ginger cookies, ginger and molasses are my favourite winter fillers. Gingerbread with its strong aroma of molasses, ginger, and cinnamon sets the scene for the perfect amount of spice that makes everything better when the weather is snowy and cold outside. Although gingerbread cake is amazing on it’s own, I always love it with a dollop of coconut ice cream. Now that’s perfection!!

Molasses is my favourite sweetener when it comes to baking. It is a nourishing sweetener that contains a considerable amount of nutrients that are essential for the body. It contains a number of essential minerals such as calcium, magnesium, manganese, potassium, and iron. These minerals help keep bones healthy, help prevent menstrual cramps, increases red blood cell formation, maintain a healthy nervous system, and help keep hair and skin healthy. And lets not forget about one of the most wonderful spices in the world, ginger! This pungent root has become well known for its health benefits, which include boosting bone health, strengthening the immune system, aiding in digestion, relieving pains related to menstrual disorders, along with much, much more.
- 1 + 1/4 cup rice flour
- 1/4 cup tapioca flour
- 1/2 cup potato starch
- 1/4 cup coconut sugar
- 2 tsp powdered ginger
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cloves
- 1/4 tsp black pepper
- 1 tbsp fresh ginger
- 1 egg
- 1 + 1/4 cup non dairy milk
- 5 tbsp melted grass-fed butter (or vegan butter)
- 2/3 cup molasses
Preheat oven to 350 degrees F.
In a large bowl, mix together the flours, potato starch, spices, baking powder, baking soda, salt, and coconut sugar.
In another bowl, beat the egg and add the milk. Stir together with the butter and molasses until combined, then mix in the fresh ginger.
Slowly combine the wet ingredients with the dry ingredients. Mix until well combined.
Scrape batter into a prepared medium sized springform pan.
Bake for approximately 30 minutes, or until cake is firm and toothpick comes out clean.
Let sit for 10 to 15 minutes and then place onto a cooling rack.
