A fall pick-me-up as I say goodbye to summer.
Goodbye summer. Goodbye veggies.
I was trying to hold on to summer for as long as possible, but I guess I have to let it go for now. As I stand outside in the cool crisp air I stare at my planter boxes feeling a little disappointed. I’m not ready to say goodbye to my veggies. My spirits take a dive and I start thinking about my own life and the changes that have occurred. I know the rhythm of the seasons will bring my veggies back next year, but today I was still trying to understand my own life changes. I take a moment to feel cheerless, and then I let it go. Life is a series of spontaneous changes and if we dwell on them it only brings sorrow. I have learned from my veggies that the strong and hardy ones survive. I have to let reality be reality and allow the things to naturally flow forward in whatever way they like.
As I start picking a few leaves of kale, I start thinking that a comfort food will cheer me up. Yes, Kale Pesto Pasta with gluten-free noodles will do the trick! It’s one of my favourite pastas to make because it’s ridiculously easy, comforting, and tasty. I also traded up the pine nuts for pumpkin seeds because of the added health benefits. They are a rich source of zinc, which is such an important mineral for building immunity, helping you sleep, and boosting mood. Zinc deficiency has been associated with colds and flus, depression, and even acne, so I try to include as many sprouted organic pumpkin seeds in my meals as I can.

Hello big bowl of beautiful green comfort! Not only is this a warming comfort food but it’s also a healthy comfort food, so you don’t have to feel guilty eating it. If you are feeling frazzled, pull out the basil and start munching because the phytochemicals in basil lowers cortisol that help ease those anxiety effects. And don’t forget that the added benefit from all the nutrients and antioxidants in this bowl will help ward off diseases such as arthritis, heart disease, and strokes.

- 12 oz gluten-free pasta
- 1 cup cherry tomatoes, halved
- 10 olives, halved
- 1/4 cup feta (optional)
- 2 cups basil
- 2 cups kale
- 1/4 cup sprouted pumpkin seeds
- 4 cloves garlic, roughly chopped
- 1/2 cup olive oil
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 tsp nutritional yeast (or parmesan cheese)
Cook pasta according to directions.
While pasta is cooking prepare other ingredients.
Combine noodles with pesto and top with veggies.
Combine all Pesto ingredients in a small food processor or blender (I use my magic bullet).
Blend until smooth.
