A perfect meal for breakfast, lunch, or dinner!
Looking for an easy meal to impress the family? Then look no further than the frittata. It is so simple that you will want to make this yummy egg dish for lunch and dinner as well. Serve it with a salad and you will have a complete meal in 30 minutes or less! Beyond the ease of preparation, the frittata can be customized to whatever you have in your fridge. The combinations are endless! But today we will start with one of my favourite breakfast combinations: potatoes, mushrooms, tomatoes, onions and rosemary. This frittata does take a little longer to cook because I roast the veggies, so that I am free to make a juice or salad without having to stand over the oven and wait for the veggies to cook. Eggs have always been a common food source for humans. They are a protein powerhouse, and supply a good amount of choline (146mg per egg), along with the mono-and polyunsaturated fats are needed to support a healthy nervous system and brain. Choose organic eggs for a more nutrient dense meal; hens that are exposed to sunlight contain 43% more vitamin D than caged hens. Just remember, what the hens are exposed to, or fed, will pass on to us.
- 4 small red potatoes
- 12 cherry tomatoes
- 4 mushrooms
- 1 onion chopped
- 3 garlic roughly chopped
- 1/2 cup cheese
- 8 eggs
- 1/2 tsp rosemary
- 1/4 tsp salt
- 1/4 tsp pepper
- sour cream and green onion for toppings
Preheat the oven to 400 F.
Bake potatoes with onions and rosemary for 20 minutes in a cast iron pan.
Add tomatoes, mushroom, and garlic and bake for another 10 minutes. Remove from oven.
Whisk together 8 eggs. Stir in salt, pepper and rosemary.
Top roasted veggies with cheese and then pour the egg mixture over the veggies.
Bake at 400 F for 15 minutes or until set in the middle.
