I just love December. It’s the month to be merry, string lights around the house, and surround yourself with everyone you love. And it’s my birthday month!
As we enter December, holiday planning is in full swing and we all know that cookies are on everyones list to make. We are talking butter cookies, sugar cookies, chocolate cookies, snickerdoodles, and the list goes on and on. But my favourite has always been these Soft & Chewy Ginger Cookies! They’re all things wonderful in one sweet, chewy, irresistible cookie that melts in your mouth.
And who doesn’t love the smell of sugar and spices baking in the oven? I mean, Christmas is already full of wonderful and comforting smells; the scent of the freshly cut Christmas tree, the wood crackling in the fireplace, a comforting hot chocolate. But the essence of freshly baked ginger cookies completes all of the wonderful smells this time of year.

It’s the holidays so why wouldn’t we let our hair down and enjoy ourselves a bit? We only get to indulge maybe once, twice, or three times a year! And then we have to be good the rest of the year, right? Anyways, I have some good news for you: most ginger cookies are loaded with fat and sugar, but not these delicious cookies. Two cookies only contain 143 calories, 4.5 grams of fat, and 11 grams of sugar. That’s pretty amazing when you consider that chocolate chip or sugar cookies contain about 10.5 grams of sugar, 6 grams of fat, and 136 calories per cookie.
And lets not forget the health benefits of these Soft & Chewy Ginger Cookies. Two cookies offer 2mg of iron, a nutrient that helps your body make red blood cells and produce energy. They also contain 8.6mcg of selenium, a trace mineral that helps increase immunity and fight free-radical damage and inflammation. - 5 tablespoons grass-fed butter, softened
- 1/2 cup + 2 tablespoons coconut sugar
- 1 egg
- 5 tablespoons molasses
- 1 cup whole wheat flour
- 1 cup spelt flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon sea salt
Preheat oven to 350 degrees F.
In a bowl, beat butter with coconut sugar until mixed. Beat in egg and molasses until combined.
In a separate bowl mix together flour, baking soda, ginger, cinnamon, cloves, and salt.
Stir dry mixture into wet mixture until just combined.
Form tablespoons full of dough into balls and place onto a baking sheet about 1 inch apart. Do not press the cookie flat.
Bake for 10 to 12 minutes. Remove from stove and let cookies cool for 5 minutes on baking sheet, then transfer to cooling racks.
