It was a cold winter and I’m hoping spring arrives soon because it’s March and I’m sitting here wrapped in a blanket, wearing my fleece socks and a wool scarf. Usually this time of year I start thinking about raw salads and soups but today I need something warm and spicy to give my internal furnace a kick-start. So I’m thinking chili will go down nicely. Chipotle peppers: These little fiery beauties are hot, but not the hottest members of the capsicum family. - 1 large onion chopped
- 4 garlic cloves minced
- 2 red bell peppers chopped
- 2 large carrots chopped
- 2 15oz cans kidney beans drained & rinsed
- 2 15oz cans black beans drained & rinsed
- 1 can chipotle peppers drained
- 1 cup vegetable stock plus more if needed
- 1 tsp chipotle chili powder
- 1 tsp cumin powder
- 1 tsp salt
- 1/4 tsp pepper
- 1 28oz can whole tomatoes roughly chopped
- 1 cup baby spinach
In a large pot over medium heat, add oil and onions. Stir occasionally until softened, about 5 minutes.
Add garlic, carrots, and bell pepper and cook for a few more minutes until veggies are soft.
Add chipotle chili powder, cumin, salt and pepper and stir continuously until the veggies are covered with seasoning.
Stir in beans, whole chipotle peppers, vegetable stock, tomatoes, and spinach.
Bring mixture to a boil and then lower heat and let simmer for about 20 minutes.
Serve with fresh cilantro, green onions, avocado and tortilla chips.
