This Sunny Potato Corn Chowder is sweet and savoury with a kick of spice! It’s also quick and easy to make and so delicious! A perfect comfort food for fall!
Has it been raining where you live? We’ve had sun all week and then the weekend rolls around and rain hits! For those of you who know me, you know that I don’t thrive in the rain (even though I’ve lived in Vancouver for 20 years). I have a tendency to get depressed easily and the dark gloomy days just don’t help, so I will do everything in my power to keep myself happy. You know, the usual stuff like exercise, think happy thoughts, eat right. But the one thing that makes me the happiest is when I get my family together around the table to eat and tell funny stories.
Well, I have to admit that we don’t actually sit around the kitchen table. I know that’s not setting a good example as a nutritionist and all, but as a child it was just my dad and I. After dinner was prepared we would retire to the couch and watch TV. So I guess that kind of stuck with me. But tonight as my children and I sit around the coffee table with the TV off, we share our stories with a comforting bowl of Sunny Potato Corn Chowder. I was lucky tonight because I had help with this one. My daughter was chopping, dicing, and cooking up a storm. She is an expert at making soups, so I just might hire her as my soup maker. 🙂
So if the sunshine decides to hide away from you and you are feeling down in the dumps, then bring the sunshine to your bowl! This soup is creamy and comforting and so easy to make (only a few ingredients) and one large stockpot!

Okay, who doesn’t love potatoes? They are so versatile and they make everything taste yummy! One of the huge benefits of eating potatoes before bed is that they contain tryptophan, an amino acid with natural sedative properties to help you sleep. And I know a lot of us need help in that department 😉
But don’t worry because if you happen not to sleep well and wake up with under-eye circles then just make a perk-up potato pack! Potatoes are so much better than cucumbers in that department because potatoes contain an enzyme called catecholase that is commonly used in high-end skincare products as a way to lighten skin and reduce dark circles. To make, remove a potato from the fridge, grate, place in a cheesecloth and apply to those tired eyes. Voila!

- 1 tablespoons grass-fed butter or oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon pepper
- 1/4 teaspoon cumin
- 3/4 teaspoon thyme
- Pinch cayenne (or more if you want it spicy)
- 1 potato, diced
- 1 organic red bell pepper, diced
- 1 cup organic corn
- 1 1/4 cup vegetable or chicken broth (plus and extra 1/4 for steaming)
- 1/2 cup almond milk or organic milk/cream
- Optional toppings: sliced green onions or chives, parsley, cheddar cheese
Heat oil in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until soft. Stir in garlic and sauté for an additional 1-2 minutes.
Add salt, pepper, cumin, thyme and cayenne pepper. Stir for 1 more minute.
Next add potatoes, red bell pepper and 1/4 cup broth. Cover pot, turn to low heat and simmer for about 10 minutes, stirring occasionally.
Finally, add corn, broth and milk. Cook for another 5-10 minutes or until potatoes are soft.
Serve warm and with topping if desired.
